Slow Cooker Chilli Con Carne

 



This recipe is so easy to make throw everything into the slow cooker on a busy work day and the family can return home to a tasty dinner already prepared!  Mince beef or Quorn mince can be used or even leave those and replace with a selection of roughly cut vegetables.   It can be served with rice, in taco shells or even wrap it in a tasty tortilla wrap and lightly bake with cheese to finish.

Ingredients

    - 1 garlic clove crushed

    - 1 large onion 

    - 2 tablespoons of tomato puree

    - 2 x 400g cans of chopped tomatoes

    - 2 large peppers (any colour)

    - Mushrooms

    - 2 x 400g cans of kidney beans

    - 2 tablespoons chilli powder or flakes (we prefer hot but make to individual taste)

    - 1 tablespoon of soy sauce

    -  A dash of Worcestershire sauce

    - 500g of extra lean mince beef or Quorn mince

    - 1 stock pot

    - salt and pepper to flavour

    - mixed spice (to taste)

    - 1 Oxo cube 


Method

1. Crush the garlic, roughly chop the peppers, onion and mushrooms.

2. Brown the mince lightly on the pan before adding to the slow cooker.

3. Turn the slow cooker to low heat.

4. Add the garlic, chopped vegetables, tomato puree, chopped tomatoes, chilli, soy sauce,             Worcestershire sauce, stock pot, salt, pepper and mixed spice to the slow cooker and stir then leave to cook through the day.

5. Add the kidney beans and the oxo cube and leave to cook for a further hour before serving.
