Would a Winter Warming Sausage Casserole Warm You Up?



Slow Cooker Sausage Casserole



 The slow cooker recipes are proving very popular so I have selected another of our family favourites this week.  This recipe is one which is enjoyed by all the family and so easy to make!  It gives me that winter warming feeling on a cold, dark night, returning from work to a ready made, easy dinner.  It takes around 20 minutes to prepare, and around 7-8 hours on low or 4-5 hours on high in the slow cooker.  I serve with mash but a baked potato or just a selection of vegetables on the side would work.

Ingredients

  • Sausages (As many as required)

  • 1 large onion roughly sliced
  • Mushrooms sliced or kept whole 
  • 2 garlic cloves crushed
  • 1 400g can of chopped tomatoes
  • 1 tbsp of tomato puree
  • 1 tbsp Worcestershire sauce
  • 1 vegetable stock cube
  • 100 mls water
  • 1 tbsp soy sauce
  • salt and pepper to season


 Method


  1. Crush the garlic, roughly chop the onion and mushrooms.
  2. Brown the sausages in a medium heat pan.
  3. Transfer to the slow cooker.
  4. Add garlic, tinned tomatoes, tomato puree, Worcestershire sauce, soy sauce, stock and water to the slow cooker.
  5. Season to taste.
  6. Cook for 7-8 hours on low or 4-5 hours on high.
  7. Serve
